Curry Shimp

Ingredients

  •       Shrimp (peeled and cleaned)
  •       Chadonbeni (culantro), chopped fine
  •       1 onion, chopped
  •       4 cloves garlic, minced
  •       2-3 pimentos, chopped
  •       1 hot peppers (to taste)
  •       Salt (to taste)
  •       3 tbsp oil
  •       3 tbsp curry powder (the more curry, the thicker the sauce)
  •       2 tsp masala
  •       2 tsp turmeric powder
  •       1-2 medium potatoes, cubed (optional)

Instructions

1    Prep the Shrimp:

  •   Peel and clean the shrimp if you bought unpeeled ones at the market.

  2    Season the Shrimp:

  • In a bowl, season the shrimp with the chopped chadonbeni, pimento, onion, and minced garlic. Dont add any salt to season becuase it already contains salt, add to taste towards the ending.
  • Cover & set that aside.

3    Start the Curry Base:

  •   Heat 3 tbsp of oil in a pot. Add the chopped onion, pimento, hot peppers  and garlic. Let it fry for about 1-2 minutes until it smells good and the edges start to turn light brown.

    Add the Spices:

  •  Stir in the curry powder (3 tbsp), (2tsp) of masala, and (2tsp) of turmeric powder.
  • Let that cook together for another minute so the spices really start to release their flavor and dissolve in the oil.
  • Add in 1/2 cup of warm water and stir until the curry mixture becomes thick. This should take 2-4 minutes.

5    Optional Potatoes:

  • If you're using potatoes, throw them in now and mix them around in the curry base. Let them soak up those spices for a minute or two. 
6   Add A LITTLE bit of Water 
  •  Add enough water to cover the potatoes (if you’re using them). Let it boil until the potatoes soften up.

 7    Add the Shrimp:

  •  Now, add your shrimp to the pot. Don't add any more water! The shrimp will release its own juices, so just stir everything in. Cover the pot and let the shrimp cook for about 3-5 minutes.

8    Taste & Adjust:

  •   After 3 minutes, check the shrimp to make sure it's cooked through. Taste the sauce and add more salt or pepper if you need to. You can also throw in some more chopped chadonbeni or extra pepper for a little kick.

 9    Serve & Enjoy:

  •   Serve hot with rice, roti, or whatever you like. Enjoy some trini curry shrimp!


Notes:
   •    Curry Thickness: The more curry powder you use, the thicker the sauce. 3 tbsp is usually a good amount.
   •    Potatoes: Totally optional, but they can soak up all the curry flavor.
   •    Spice Level: Adjust the hot pepper to your liking. If you want it extra spicy, add more!
