Dumpling and stew chicken
Ingredients:
For the Stew Chicken:
- 2 lbs chicken (cut into pieces)
- 1 tbsp green seasoning (a blend of cilantro, parsley, garlic, scallions, thyme, and hot pepper)
- 1 tbsp worchire sauce
- 1 tbsp brown sugar (for browning)
- 1 medium onion (sliced)
- 2-3 cloves garlic (minced)
- 2-3 sprigs fresh thyme or 1 tsp dried thyme
- 2 scallions (chopped)
- 1-2 scotch pimento peppers (finely chopped)
- 1 tbsp ketchup
- Salt and black pepper to taste
- 2 tbsp oil (vegetable or coconut oil)
For the Dumplings:
- 2 cups all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- 1 tbsp sugar
- ¾ cup water (adjust as needed)
Stew Chicken:
Prep the Chicken:
- Season the chicken with onion, pimento, green seasoning, salt, black pepper, hot pepper, worcestshire sauce, and ketchup . Let it marinate for at least 30 minutes (or overnight in the fridge for better flavor).
Caramelize the Sugar (Browning):
- In a large pot or dutch oven, heat the vegetable oil over medium heat.
- Add the brown sugar and stir continuously until the sugar melts and darkens into a light brown color. This should only take about 3-5 minutes, so keep a close watch to avoid burning.
Cook the Chicken:
- Add the seasoned chicken pieces to the pot and stir to coat the chicken with the browned sugar.
- Cover pot for (about 5-7 minutes) and let it release it's natural water.
- Now you can start making your dumplings
Make the Dough:
- Now don't forget the chicken
- In a large mixing bowl, combine the flour, baking powder, salt, and sugar.
- Gradually add the water, a little at a time, stirring with your hands or a spoon until a soft dough forms. Knead gently for 2-3 minutes until smooth.
- Pinch off small portions of dough and roll them into balls or shape them into flattened discs (about 2-3 inches in diameter). You can make them round or slightly oval-shaped, depending on your preference.
Now back to the chicken
- Add some warm water to your bowl from the seasoned chicken and add it into your pot.
- Add enough water for chicken to cook
- Reduce heat to low and cover the pot.
- Let the chicken simmer for 20-25 minutes,
- Coming up to the last 10 minutes add in your dumplings and wait for them to rise.
- Once they are coated in the stew and soft to your liking, yuh INSIDE.
